Eating my feelings

They say with every change of season comes a change in tires. Specifically, the one adorning my midsection since taking up with the boy from up the street and being just so darn HAPPY. Also, it's pumpkin time, so everything I'm making lately is made with that or some kind of seasonal vegetable because it's law.

Here are some November-y snacks I made this month:

Quinoa pie with butternut squash - adapted from Martha Stewart

Tiny baby corn muffins with honey

Oeufs en cocotte with homemade white cheddar macaroni
(sweet potatoes, mushrooms, sundried tomatoes, avocado, unchicken nuggets)

Chocolate banana pancakes with pomegranate seeds

Roasted root vegetables for Wu-Tanksgiving

Hickory smoked quinoa salad with beets, apples, squash, pomegranate seeds and goat cheese

Pumpkin spice whoopie pies - Oh She Glows

Butternut squash soup-infused quinoa with avocado and old white cheddar

My favourite kind of pumpkin - Toronto Humane Society
